Easy Chicken Parmesan

 This quick and easy chicken Parmesan is baked, not fried.

 TRY IT...!

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed and finely chopped
  • 1/4 teaspoon crushed red pepper flakes, or to taste
  • 6 skinless, boneless chicken breast halves
  • 2 cups prepared marinara sauce
  • 1/4 cup chopped fresh basil
  • 1 (8 ounce) package shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, divided
  • 1 (5 ounce) package garlic croutons

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Coat the bottom of a 9x13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes,some of the sauce.
  3. Arrange the chicken breasts after seasning with salt and peper, in bottom of the dish, and pour marinara sauce over chicken. Sprinkle basil over marinara sauce, and top with half the mozzarella cheese, followed by half the Parmesan cheese. Sprinkle on the croutons, then top with the remaining mozzarella cheese and remaining Parmesan cheese.
  4. Bake in preheated oven until cheese and croutons are golden brown and the chicken is no longer pink inside, about 35 minutes to an hour, depending on the shape and thickness of your chicken breasts. An instant-read thermometer inserted into the thickest part of a chicken breast should read at least 160 degrees F (70 degrees C).

Tuna Melt Sandwich

I love sandwiches and I love this recipe.This is a fast and delicious tuna melt  It's easy to make and tastes delicious,you can try it...

Ingredients

  • 1 (6 ounce) can tuna, drained and flaked
  • 2 tablespoons mayonnaise
  • 1 pinch salt
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • 2 slices whole wheat bread
  • 2 teaspoons chopped dill pickle
  • 1/4 cup shredded sharp Cheddar cheese

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Place bread slices in the oven to toast while it preheats, and while you make the tuna salad.
  2. In a small bowl, mix together the tuna, mayonnaise, salt, balsamic vinegar, mustard and dill pickle until well blended. Remove bread from the oven, and pile the tuna mixture onto one slice. Sprinkle cheese over the other slice of bread.
  3. Bake for 7 minutes in the preheated oven, or until cheese is melted and tuna is heated through. Place the cheese side of the sandwich on top of the tuna side. Cut in half and serve immediately.

Cofffee Balls


Purchased cookies make this no bake dessert or snack easy to make.

Ingredients:
 8 oz     crisp, unfrosted sugar cookies,
             finely crushed (2 cups)   
1cup     toasted hazelnuts, almonds,
            or pecans, finely chopped
1cup     sifted powdered sugar
1/4cup  light-color corn syrup
2 TS     coffee-, orange-, or
             almond flavor liqueur
2 TS     butter,melted
1/3cup  sifted powdered sugar
2 TS     edible glitter (optional)


Directions:
1. Combine crushed cookies, nuts, the 1 cup powdered sugar, corn syrup,liqueur and butter in a mixing bowl; stir with a wooden spoon until well-mixed. Shape into 1-inch balls.
2. Roll balls in the 1/3 cup sifted powdered sugar (combined with edible glitter, if desired); cover. Let stand 2 hours. Before serving, roll again in powdered sugar. Chill up to 2 days or freeze up to 3 months. Makes 40 balls.

Spring Salad

      This salad is for your spring break days,you can enjoy eating it with every meal,it is the harvest colorful salad, it comes up with spring spirit...I like it becouse I can change ingredients around...Sooo ENJOY... it is the Spring Break...

Ingredients

  • 1/2 cup chopped walnuts
  • 1 bunch baby spinach
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled blue cheese
  • 2 tomatoes, chopped
  • 1 avocado - peeled, pitted and diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup walnut oil(you can use olive oil instead)
  • 2 tablespoons red raspberry jam (with seeds)
  • 2 tablespoons red wine vinegar
  • freshly ground black pepper to taste
  • salt to taste

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Arrange walnuts in a single layer on a baking sheet. Toast in oven for 5 minutes, or until nuts begin to brown.
  2. In a large bowl, toss together the spinach, walnuts, cranberries, blue cheese, tomatoes, avocado, and red onion.
  3. In a small bowl, whisk together jam, vinegar, walnut oil, pepper, and salt. Pour over the salad just before serving, and toss to coat.

Arab Eggplant Salad Dip (Baba Ganoush)

Easy , Simple , delicious side dish for every occasion,a tasty spread which is easy to make with simple ingredients. And I used to serve it with toasted bread or pita triangles.

Ingredients:

4 servings

  • 1 big eggplant
  • 2-3 cloves garlic, crushed
  • juice of 1  lemon
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup tahini (sesame paste)
  • 1/2 cup chopped parsley

Instructions:

- Preheat oven to 400 degrees F,Place eggplant on baking sheet, and make holes in the skin with a fork. Roast it for 30 to 40 minutes, turning occasionally, or until soft. Remove from oven.
- Peel the eggplant skin off,and mash in a bowl with a fork. Add remaining ingredients (garlic, lemon juice, olive oil, and tahini) and mix well.
- Garnish with chopped parsley,olive oil.

Storage: Baba Ganoush can be made and refrigerated for up to five days prior to serving.

Easy Quiche

    This is an easy mix it up in one bowl and cook recipe. I read it in one of the cooking sites and I make it whenever I attend long day classes,and it hit every time i did it , everyone in my family love it even my picky son, and I like to share it with you. You may substitute chopped spinach for the broccoli if you wish.

 servings for 8

Ingredients

  • 2 cups milk
  • 4 eggs
  • 3/4 cup biscuit baking mix
  • 1/4 cup butter, softened
  • 1 cup grated Parmesan cheese
  • 1 (10 ounce) package chopped frozen broccoli, thawed and drained
  • 1 cup cubed cooked ham(or bacon slices)
  • 8 ounces shredded Cheddar cheese

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch quiche dish(you can use 9*9 pie pan).
  2. In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. Batter will be lumpy. Stir in broccoli, ham and Cheddar cheese. Pour into prepared quiche dish.
  3. Bake in preheated oven for 45 minutes, until eggs are set and top is golden brown.
